In a saucepan over medium heat, melt the butter. Add the flour and stir for a minute until lightly toasted. Gradually add the milk, stirring constantly to avoid lumps. Continue stirring until the mixture begins to boil and thicken. Gradually add the grated Cheddar cheese, stirring until completely melted. Add the salt, black pepper, paprika, and turmeric (if using), and stir until combined. Remove the sauce from the heat and serve hot with your favorite dishes.
