Lack of rapid crystallization: Some natural honey may crystallize (solidify slightly), but slowly, and this is normal. Adulterated honey often does not crystallize or crystallizes quickly due to the addition of sugar. Does not cause a burning sensation in the throat: Adulterated honey may cause a burning sensation or be overly sweet. Pure honey has a mild warmth and a balanced flavor.
